"Recipes with honey but not only sweet"

- or the recipes of delicacies made of honey:

Honey baked apple:
Ingredients: apple, honey, nutmeat, raisin, rum, lime juice.
Preparation: Put the raisin into the rum and cut the nut into small pieces. Cut the apple into two halves above its core and cut it out. Pour little lime juice on the hole and then put the raisin mixed with the nut (drifted) into it. Put some honey onto it and finally, match the two halves of the apples. Put them into a hot oven and bake it until it shrivels a bit.

Hungarian honey cake:
Ingredients: 25 dkg honey, 50 dkg whole wheat flour, 1 dl water, cinnamon, clove, 1 dkg cooking soda, nut, stewed prunes.
Preparation: Mix flour with honey, water, nut and spices and rest it an hour. After that roll it our ca. 1 cm thick and besprinkle its top with roughly grated nut. Form different shapes with the form cutter and put one piece stewed prune into its centre. Honey cake must be baked in an oven of 150-180 C degrees over ca. 10 minutes.

Honey sponge slices:
Ingredients for the pastry: 1 egg, 4 dkg lard, 1 teaspoon cooking soda, 2 tablespoons honey, 2.5 tablespoons milk, 15 dkg sugar and 45dkg flour.
Ingredients for the cream: 15 dkg vanilla sugar, 20 dkg butter, 2 dl milk, 2 tablespoons semolina, 4 tablespoons apricot jam. Preparation: for the pastry: Cook 1 egg, 4 dkg lard, 1 teaspoon cooking soda, 2 tablespoons honey, 2.5 dl milk and 15 dkg sugar in steam 5 minutes long and then mix it with an egg-shaker. Mix the 45 dkg flour into it when it is warm. Mix it well on a board and form 4 loaves and rest it 1 hour long. After that roll it out and bake it on the back-side of a larded ad floured oven pan one by one. Preparation of the CREAM: Cook the semolina in 2 dl milk until it is hard and after it cooled down, and add it to the butter mixed with sugar. Mix it well and fill the bars. Put jam on the lower bar, cream in the middle and jam again and press it so that the cream can make the pastry soft. Besprinkle it with powder sugar and cut it into slim slices.

Honey chicken with rosemary:
Ingredients: 3 tablespoons honey, 3 tablespoons lime juice, 2 teaspoons dried rosemary, a pinch of red pepper, 6 chicken fillets.
Preparation: Mix honey, lime juice, red pepper and dried rosemary in a small bowl and then cream the prepared chicken fillets with the half of the mix from both sides. Set the oven to middle temperature, ca. 175 °C and bake it 1 hour long or until it is totally fried and sometimes you can cover it with the remaining mixture.

Turkish honey:
Ingredients: 30 dkg sugar, 3/4 glass water, 15 dkg honey, the juice of 1 lemon, 25 dkg nut or walnut, 4 egg-white, cake bars.
Preparation: Cook thick syrup from water and sugar and add honey so that it can keep its colour. Put the juice of the lime and nut into it. Take it off from the oven and stir it until it is thicker. Whisk egg-white and slowly mix it with the mass and pour it onto the cake bars. Align it and put another bar onto it. Press it with a board. Cut it into slices with watered knife after getting cool.

Hungarian Honey Cake:
Ingredients: 10 dkg margarine or butter, 10 dkg sugar, 10 dkg honey, 2 whole eggs, 20 dkg flour, 1 dkg salt volatile, 1/2 teaspoon ginger, clove and cinnamon, 5 dkg sugared orange-peel, little bread crumbs.
Preparation: Choose a round or a long form and cream it with lard or butter and besprinkle it with bread crumbs. Mix the butter or margarine with sugar, add the boiled honey with the orange-peel cut into dices and add the whisked eggs, flour, spices and volatile salt. Then mix it into the prepared form. Bake it in a middle warm oven 40 minutes long.


Honey gerbeaud (HUNARIAN ZSERBO):
Pastry
50 dkg flour, 6 dkg butter, 15 dkg crystal sugar, 1 teaspoon champagne (or vine), 4 tablespoons sour cream. It has to be mixed and bake it on 6 bars.
Cream
4dl milk, 3 egg-yolks, 2 tablespoons powder sugar, 3 tablespoons flour, 1 pack of vanilla sugar: it has to be cooked until it is thick.
Mix 20 dkg butter with 15 dkg powder sugar and then mix it with the mass (after it got cool), and finally, add the hard foam of the 3 eggs, 15 dkg nut and 1 dl rum.
Fill the 6 bars and put a part of the mass onto its top and then besprinkle it with nut.


Little cakes for children
Ingredients: /for 20 pieces/

1dl joney,15 dkg flour,12dkg powder sugar, 2 egg-yolks, 1dl sour cream, a knife-pin volatile salt, 8 dkg butter, 1 egg-white, 8dkg nut, grated lemon skin, mixed fruit jam
Put the honey into the mixing bowl, add the egg-yolks, the powder sugar, the soft butter, volatile salt and sour cream. Besprinkle it with the grated lemon-skin and stir it with the spoon until it became foam. Add flour and put it onto a board and make a soft pastry from it. Roll it out half centimetre thick and cut different forms from it.
Put it into the creamed baking pan and cream it with egg-white and then decorate it with a quartered nut. Rest it in the baking pan an hour long. Heat the oven to 240 C degrees and put the pan into it. When the pastry lifted up, reduce the heat to 180 C degrees and bake it pink.
After it got cool, cream it with fruit jam and match the parts. This cake can be stored for a long time.
